Got Zucchini?

Even if you don’t have zucchini growing out back, ’tis the season to be cooking and baking with it and so head to the market and and then get into the kitchen. We’ve been eating it grilled, roasted, even slivered ever so thinly and served raw. Today I thought it was time to do some baking. My good friend B. has a houseful of relatives awaiting the wedding of her daughter this weekend and I thought she might need a little something to serve them in the morning.

My Mom’s Zucchini Bread

3 large eggs
1 cup oil
2 cups sugar
2 teaspoons vanilla
2 cups shredded zucchini
3 cups all-purpose flour
2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon grated nutmeg
1 cup chopped walnuts

Preheat the oven to 350 degrees. Grease 2-9″x5″ loaf pans. Beat the eggs with oil. Add sugar and vanilla and beat until thick and foamy. Stir in grated zucchini.

Combine flour, salt, baking soda, cinnamon, and nutmeg. Stir into batter and add chopped walnuts (you could also add 1 cup raisins if you like).

Divide batter into loaf pans and bake for 1 hour. Cool 10 minutes in pans and then then turn out on to cooling rack. Enjoy!

  1. Zucchini is on my mind. Tonight I made a Zucchini/Tomato/Onion gratin and it was yummy! This recipe looks delicious and simple!
