This classic dish is a holiday tradition in my family. We typically had this salad of Bibb lettuce and shrimp as the first course at many a Christmas dinner. I’m not sure why I only tend to make this during the holiday season. It would be a great starter any time of the year.
I’m giving you my mom’s recipe for the dressing. I prepare the shrimp earlier in the day and chill them until it’s time to plate. Take tender Bibb lettuce (also known as Boston lettuce) leaves, top them with chilled shrimp and spoon dressing over.
Shrimp Louie Dressing
3 scallions, sliced
6 tablespoons diced red bell pepper
2 tablespoons capers
2 tablespoons horseradish
1 cup mayonnaise (Hellmans or Best Foods)
1/2 cup chili sauce (I use Heinz)
1/2 teaspoon crushed red pepper
salt and freshly ground pepper
1 clove garlic, minced
Mix all ingredients together and spoon over salad.
I also love this dressing on a turkey sandwich!
